My husband said this is officially his new favorite recipe, of all recipes. And, I can make it for him for any breakfast, lunch, or dinner. đ I actually have no problem with this, because I really loved this recipe. Huevos Rancheros Recipe

Peel and chop your potatoes. Boil them for about 5 minutes.
Heat up some oil (I prefer olive for this) in your first skillet. Add your potatoes and begin to sauté them.
After your potatoes cook for about 4-5 minutes, add your tomatoes, jalapeños, onions, smashed/chopped garlic, & green chiles. Sprinkle with cayenne pepper sauce (aka hot sauce) and cumin, salt, & pepper.
Add black beans. Let cook on medium low/low while you start frying up tortillas and eggs in a second skillet.
This is the yummy mixture that will result:
In a second hot skillet, heat your tortillas, one by one, first. A minute on each side, until they bubble or get crispier/brown, will do.
Put each tortilla on a plate.
After you fry all the tortillas you want to use, you can use the same skillet to fry up an egg. I prefer mine over-easy, hubby prefers his eggs over-hard, so I just make them one by one.
Top each tortilla with the potato/salsa mixture, then top that mixture with your fried eggs.
On top of the eggs, the toppings can be left up to each person’s preference. I wish I had avocado or some white queso or cotija cheese today, but I didn’t. That said, cilantro fresh out of the garden and goat cheese (chĂšvre) served us jjjuuuusssstttt fine!

The kids actually really LOVED this meal, even though I used hot sauce and peppers, which The Dude typically hates. It was just too yummy! This little guy was clever enough to make his toppings into a smiley-face. Can you spot the bacon mustache?
